Meatless Monday: 5 Fall Vegan Comfort food Recipes

We have a few spectacular restaurants here in Denver that serve terrific vegan comfort food, but I also like to cook at home. My husband is enjoying it too, now. It can be hard to find tried and true recipes though, can’t it? If we are going go through all the effort, we would like to know it tastes good!

So, here you go. 5 fall vegan comfort food recipes (4 of which I have made and love!) Enjoy!

Lentil loaf with Mashed Potatoes and Peas

I mean, how much more comfort foody can you get than this? My husband found a little trick with this one- he doubles the ketchup topping recipe and mixes half right into the loaf then tops with the rest. Click here for the loaf recipe.  Add the potatoes and peas yourself!

Autumn Squash Soup

Simple. Straightforward. Delicious. (and oh-so autumnal!) This is a great one to double (or even triple the batch) and keep on hand for when you are running late, need something on the go, or want a quick snack. My kids like this one too! Click here for the recipe. 

The Ultimate Vegan Lasagna

I have zero Italian in me so I don’t know where this comes from, but nothing says Fall to me like lasagna on a Sunday! It was one of the things I most missed when moving toward a vegan diet… until I found this! The cheese recipe in here is excellent- I add my own seasonings and use it for all sorts of things- pizza, stuffed shells, baked ziti. It’s great! Click here for the recipe. 

Creamy Fettuccine Alfredo

Let’s keep that Italian train going! Okay. We have all tried some variation or attempt at vegan alfredo, and I bet most of us would say “blech”. Let yourself try one more- this one. It’s delicious and with whole food ingredients there are no weird chemical after tastes! Click here for the recipe (and ignore the whole weight loss thing- the recipe is terrific!).

Baked Acorn Squash with Chestnuts, Apples and Leeks

This is the one that we have not yet made. Kris is making it tomorrow night. I had to include it though, because look at it!
